

-Mix 1 1/4 cup flour, 1 Tb. baking powder, 1 1/2 Tb. sugar.
-Add 1 cup milk, 2 Tb. melted butter, 1 beaten egg.
Variations:
-Substitute 1/2 cup canned pumpkin for 1/4 cup flour. Add 1 Tb. more sugar.
-Substitute rye flour for some of the white flour.
-Add cut up fruit or fresh strawberries or other berries.
This recipe is of historic proportions -- in time anyway. We have it for at least 25 years and have used it for countless breakfasts. It has allowed us never to be attracted to mixes or other processed forms for waffles and pancakes. And it's reliably delicious! Of course extra butter and Vermont maple syrup add to the package.
